The Gesshin Ittetsu wa gyuto tend to run on the thin side and for a honyaki knife, this is no exception. Not quite a laser, this knife is still very thin behind the edge. This honyaki blade also has a beautiful hamon (from the heat treatment process) that is visible on both sides of the blade. The surfaces of each side have been mirrror
