The farms high elevation and clay rich soils slow cherry development, resulting in denser beans and lower yields. Cherries are processed on site at the farms own wet mill, allowing the Sanchez family to maintain control from harvest through to drying. For this lot, the coffee is pulped and dried with a portion of mucilage
